Ideal as a starter or side with BBQ

Old, dry bread
4 fresh tomatoes
fresh basil
1 garlic clove
1 mild red onion
3 tbs balsamic vinegar
Olive oil
1 teaspoon mild mustard (eg Dijon)
black pepper and salt

Chop the tomatos, garlic and onions. add half of the fresh basil, olive oil and balsamic, stir, close and leave in fridge for at least 4 hrs.
Cut the the bread in small dices and leave it soaking for 20 min. Add the other half of fresh basil.
Before serve sprinkle again with olive oil and add mustard, pepper and salt.
Taste even better next day!

Sounds like a very good topping for bruscheta, will definetly try it next week.Toasting the bread on the BBQ.

One of the best things we have bought for cooking outside in Portugal were a couple of heavy base cast iron pans.
We use these all the time, we have even cooked spagbol in them over the BBQ when we had a problem with our cooker on the day we moved in.

Instead of grilling prawns ,

Cook them in the pan on the BBQ with a little oil , garlic ( piri piri optional ).
Finish off with a glass of white wine or Nata and bring still sizzeling to the table.
Fantastic with fresh crusty bread.

Yes indeed a very good option, we do that on each family meetings also in the pan in the winter in the oven grill and in summer on the BBQ.
Try fresh lemon juice as a finish.
Yummy!

Alentejo Bread Soup. I have the recipe somewhere but from memory it consists of hot water, stale bread, some boiled tomatoes and garlic.

Genuine peasant food! Garnish with coriander and add an egg to go up market.
